Instructions

Prepare the Dough

  • Combine whole wheat flour, ghee, and salt in a bowl. Gradually add water and knead into a stiff dough. Cover and let rest for 20-30 minutes.

Make the Filling

  • In a pan, cook mango pulp over low heat, stirring constantly. Add coconut, sugar, cardamom, nutmeg, almonds, and cashews. Continue stirring until the mixture thickens and the water evaporates. Remove from heat and let cool completely.

Assemble the Modak

  • Roll small portions of the dough into 5-6cm circles. Place 1-2 teaspoons of filling in the center.
  • Bring the edges together, pinching them to form pleats. Continue pinching until a pointed top is formed.
  • Repeat with the remaining dough and filling.

Bake the Modak

  • Preheat oven to 350°F (180°C). Grease a baking tray with ghee or oil. Arrange the modak on the tray and brush the tops with ghee or oil.
  • Bake for 15-18 minutes, or until lightly golden brown.

Garnish and Serve

  • Garnish with mango pulp and chocolate syrup (optional). Serve warm.

Recipe Notes

Expert Tips for Perfect Mango Modak

  • For a smoother dough, let the dough rest for at least 30 minutes. This allows the gluten to relax, resulting in a more pliable dough.
  • Don't overcrowd the baking tray. Allow space between the modak for even baking.
  • Adjust the sugar in the filling to your preference. You can also add a pinch of salt to enhance the sweetness.
  • For a richer flavor, use homemade mango pulp. You can also experiment with other fruit pulps like pineapple or peach.
