Recipe Notes
Good To Know
- For extra crispiness, toss the boiled potato cubes in a little cornstarch before shallow or deep frying—they'll develop a golden, crunchy exterior that stands up better to the chutneys and toppings.
- If you want a more protein-rich chaat, swap out white peas for sprouted moong beans or a mix of both for added nutrition and texture.
- Drizzle a bit of tamarind-date chutney and spicy green chutney just before serving to add more layers of flavor and keep the chaat from becoming soggy.
- For a striking presentation, serve the Aloo Chat over small papdi (crispy wafers) or in lettuce cups for a fun and mess-free party appetizer.
Expert Tips
- Adjust the spice level of your chaat by adding more or less green chili to the chutney or sprinkling a pinch of red chili powder over the finished dish.
- For a fresher take, add chopped cilantro, mint, or pomegranate seeds just before serving.
- Don't overcook the potatoes. They should be tender but still hold their shape.
Storage Instructions
- Aloo Chaat is best enjoyed fresh. Leftovers can be stored separately (potatoes, chutneys, toppings) in airtight containers in the refrigerator for up to 2 days. However, the potatoes may lose some of their crispness.
