Ingredients
 

For the Lassi

  • 300 gm Yogurt plain, full-fat yogurt; also known as curd
  • 50 gm Rabri store-bought or homemade condensed milk
  • 25 gm Cashew Paste soaked cashews blended until smooth
  • 2 tsp Sugar adjust to taste, powdered
  • 1/2 tsp Saffron Strands or 1/4 tsp saffron infused in 1 tbsp milk

Prepare the Cashew Paste

  • Soak the cashews in warm water for at least 30 minutes. Drain and blend into a smooth paste.

Blend the Lassi

  • In a blender, combine the yogurt, rabri, cashew paste, and powdered sugar. Blend until completely smooth and creamy. If using saffron strands, gently stir them in at this stage, or add the saffron-infused milk.

Serve

  • Pour the lassi into an earthenware glass or serving bowl. Garnish with sliced almonds and the saffron-infused milk (if using strands separately).
