Ingredients
Aromatic Spices
- 2 Bay Leaves
- 2 inch Cinnamon Stick
- 10 Peppercorns black
- 2 Cardamom Pods green cardamom pods, also known as elaichi
- 2 clove Cloves
Vegetables
Spices & Seasoning
- 1 tbsp Ginger-Garlic Paste
- 1/2 tsp Garam Masala
- 1/3 tsp Turmeric Powder haldi
- 1.5 tsp Salt or to taste
Base
- 3 cups Basmati Rice rinsed
- 4 cups Water adjust according to rice type and desired consistency
- 1/4 cup Oil vegetable or canola oil
Instructions
Preparing the Spices and Aromatics
- Heat oil in a pressure cooker over medium heat. Add bay leaves, cinnamon stick, peppercorns, cardamom pods, and cloves. Sauté for 1 minute, or until fragrant.
Sautéing the Vegetables
- Add the chopped onion and sauté for 1 minute until translucent. Add ginger-garlic paste and sauté for 3 minutes until fragrant. Stir in green chilies, garam masala, and turmeric powder and saute for another minute.
Combining and Cooking
- Add the diced potatoes, green peas, and sliced carrots. Cover and cook for 2 minutes on low heat to slightly soften the vegetables.
Adding Rice and Water
- Stir in the rinsed basmati rice and salt. Add 4 cups of water (adjust as needed depending on your rice and desired consistency). Stir gently to combine.
Pressure Cooking
- Secure the lid of the pressure cooker and cook on high heat until 3 whistles. Reduce heat to low and simmer for 5 minutes after the whistles stop. Allow the pressure to release naturally.
Serving
- Once the pressure is released, fluff the rice gently with a fork. Serve hot with your choice of accompaniments like raita (yogurt dip), papad (thin crispy lentil wafers), or a side of curd (yogurt).
