Instructions

Marinate the Mutton

  • Marinate the mutton with ginger-garlic paste and salt. Set aside for at least 2 hours, or preferably overnight in the refrigerator.

Sauté Aromatics

  • Heat oil in a heavy-bottomed pot or Dutch oven over medium heat. Add the whole spices (peppercorns, cinnamon, cloves, green and black cardamom) and sauté until fragrant and lightly browned, about 1-2 minutes. Be careful not to burn the spices.

Cook the Onions and Tomatoes

  • Add the thinly sliced onions and sauté until golden brown. Add the finely chopped tomatoes and cook for 3-4 minutes, stirring occasionally, until softened.

Incorporate Spices and Mutton

  • Stir in the cumin seeds, red chili powder, turmeric powder, and coriander powder. Cook for another minute until fragrant. Add the marinated mutton and mix well to coat with the spices.

Add Yogurt and Herbs

  • Stir in the yogurt, chopped mint and coriander leaves, and green chilies. Cook for 4-5 minutes, stirring frequently, until the mutton is lightly browned and the flavors have melded.

Add Water and Simmer

  • Pour in 2.5 cups of water (adjust as needed for your desired consistency), bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the mutton is almost tender.

Add Rice and Finish

  • Gently stir in the rinsed basmati rice. Bring the mixture back to a boil, then reduce the heat to the lowest setting, cover tightly, and simmer for 15-20 minutes, or until the rice is cooked through and the liquid is absorbed. Do not lift the lid during this time.

Serve

  • Fluff the rice gently with a fork. Serve the Hyderabadi Mutton Tahri hot, garnished with fresh cilantro (optional) and alongside raita for a delicious and refreshing contrast.

Recipe Notes

Expert Tips for the Best Hyderabadi Mutton Tahri:

  • For extra flavor, you can brown the mutton pieces separately before adding them to the pot. This adds depth to the overall taste.
  • If you prefer a spicier dish, add more red chili powder to your liking. Adjust according to your spice preference.
  • Soaking the basmati rice for 30 minutes before cooking helps to ensure even cooking and a fluffier texture.
  • Don't overcook the rice; once the liquid is absorbed and the rice is cooked through, remove from heat immediately to prevent it from becoming mushy.
