Ingredients
Mutton and Marinate
- 500 gm Mutton cut into bite-sized pieces
- 2 tbsp Ginger-Garlic Paste
- 1.5 tsp Salt or to taste
Whole Spices
- 3 Peppercorns whole, black
- 1 inch Cinnamon Stick
- 3 Cloves whole
- 2 Cardamom elaichi, green, pods
- 1 Cardamom pod, black
Aromatics and Vegetables
- 1/4 tsp Cumin Seeds
- 2 medium Onion thinly sliced
- 1 medium Tomato finely chopped
Spices
- 1 tsp Chili Powder red
- 1/2 tsp Turmeric Powder haldi
- 2 tbsp Coriander Powder dhania
Dairy and Herbs
- 1/2 cup Yogurt plain, also known as curd
- 2 tbsp Mint Leaves chopped
- 2 tbsp Coriander dhania, chopped
- 2 Chilies slit lengthwise, green
Other
- 1 cup Oil vegetable or any neutral oil
- 2 cup Basmati Rice long-grain
- 2.5 cup Water adjust as needed for desired consistency
Instructions
Marinate the Mutton
- Marinate the mutton with ginger-garlic paste and salt. Set aside for at least 2 hours, or preferably overnight in the refrigerator.
Sauté Aromatics
- Heat oil in a heavy-bottomed pot or Dutch oven over medium heat. Add the whole spices (peppercorns, cinnamon, cloves, green and black cardamom) and sauté until fragrant and lightly browned, about 1-2 minutes. Be careful not to burn the spices.
Cook the Onions and Tomatoes
- Add the thinly sliced onions and sauté until golden brown. Add the finely chopped tomatoes and cook for 3-4 minutes, stirring occasionally, until softened.
Incorporate Spices and Mutton
- Stir in the cumin seeds, red chili powder, turmeric powder, and coriander powder. Cook for another minute until fragrant. Add the marinated mutton and mix well to coat with the spices.
Add Yogurt and Herbs
- Stir in the yogurt, chopped mint and coriander leaves, and green chilies. Cook for 4-5 minutes, stirring frequently, until the mutton is lightly browned and the flavors have melded.
Add Water and Simmer
- Pour in 2.5 cups of water (adjust as needed for your desired consistency), bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the mutton is almost tender.
Add Rice and Finish
- Gently stir in the rinsed basmati rice. Bring the mixture back to a boil, then reduce the heat to the lowest setting, cover tightly, and simmer for 15-20 minutes, or until the rice is cooked through and the liquid is absorbed. Do not lift the lid during this time.
Serve
- Fluff the rice gently with a fork. Serve the Hyderabadi Mutton Tahri hot, garnished with fresh cilantro (optional) and alongside raita for a delicious and refreshing contrast.
