- 1 Large Potato and diced, boiled, peeled
- 1 Onion chopped, medium
- 3 Chillies finely chopped, green
- 1 sprig Curry Leaves
- 2 Tbsp Coriander chopped, fresh

- 2 cup Flattened Rice flattened rice, rinsed, thick
- 1 tsp Mustard Seeds
- ⅓ tsp Turmeric Powder
- 1 ½ tsp Salt or to taste
- 4 Tbsp Oil
Garnish
- 1 Lemon cut into wedges
Instructions
- Heat the oil in a wok or large skillet over medium heat. Add the mustard seeds and allow them to splutter. This releases their nutty aroma.
- Add the curry leaves and sauté briefly until fragrant. Be careful not to burn them.
- Add the chopped onion and sauté until translucent, about 5-7 minutes. This softens the onions and develops their sweetness.
- Add the green chilies and sauté for another 30 seconds until fragrant.
- Stir in the turmeric powder and cook for 15 seconds, stirring constantly, until fragrant. This blooms the spice and enhances its flavor.
- Add the diced potatoes and sauté for 2-3 minutes, stirring occasionally, until heated through.
- Season with salt and mix well.
- Place the rinsed poha in a fine-mesh sieve and rinse under running water for a few seconds until softened. Gently fluff with your fingers. Do not over-rinse, as this can make the poha mushy.
- Add the softened poha to the wok and mix gently with the other ingredients. Cook for 2-3 minutes over low heat, stirring occasionally, until heated through. The poha will turn slightly yellowish in color.
- Stir in the chopped fresh coriander.
- Serve the Kanda Batata Poha hot, garnished with lemon wedges. The lemon juice adds a burst of fresh flavor that complements the other ingredients.
