  • Finely chop onions, coriander, and mint leaves. Mince ginger and garlic. Slit green chilies.

Sautéing Aromatics

  • Heat ghee and oil in a large pot or Dutch oven. Add cloves, cinnamon, star anise, bay leaf, and cardamom pods. Sauté for 1 minute until fragrant.

Building Flavors

  • Add green chilies, ginger, and garlic. Sauté until the raw smell disappears. Add coriander and mint leaves, sautéing until they change color. Add onions and sauté until translucent.

Coconut Paste

  • Grind coconut and poppy seeds with a little water into a smooth paste. Strain the mixture to extract the milk. Set aside the paste.

Browning the Mutton

  • Add the mutton to the pot and brown on all sides for about 5 minutes. Add chili powder, coriander powder, turmeric powder, and salt. Continue to sauté until the mutton is dark brown.

Yogurt & Marinating

  • Stir in the yogurt, ensuring the mutton is well coated. Let it rest for 5-10 minutes for the flavors to meld.

  • Gently stir in the soaked basmati rice and the remaining water. Add additional salt if needed. Stir well to combine the rice and mutton with the sauce.

Final Cooking

  • Bring to a simmer, cover, and cook until the rice is tender and the liquid is absorbed. This can be done on the stovetop or in a rice cooker. If using a pressure cooker, cook according to the manufacturer's instructions. Once cooked, let it rest for 10-15 minutes before fluffing gently with a fork and serving.
