- 3/4 cup Jaggery adjust to your desired sweetness
- 1 tsp Cardamom Powder or 1/2 tsp cardamom extract
- 1/4 cup Coconut freshly grated is best, shredded
For the Batter
- 1/2 cup All-Purpose Flour maida
- 2 tbsp Rice Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Water approximately, add more as needed to reach desired consistency
For Frying
- 2 cup Vegetable Oil or any neutral oil for deep frying
Instructions
Prepare the Chana Dal Filling
- Pressure cook the chana dal until soft. Drain the water and mash the dal well using a ladle.
- Transfer the mashed dal to a pan. Add the jaggery and cook over medium heat until it melts completely.
- Stir in the cardamom powder and shredded coconut. Mix well and remove from heat. Allow the mixture to cool completely before shaping into small balls.
Prepare the Batter
- In a mixing bowl, combine the all-purpose flour, rice flour, baking soda, and salt.
- Gradually add water while mixing continuously until you achieve a smooth, pourable batter, similar in consistency to idli batter.
Fry the Suzhiyam
- Heat the oil in a deep frying pan or kadai over medium heat.
- Dip each chana dal ball in the batter, ensuring it's fully coated.
- Carefully drop the coated balls into the hot oil, frying a few at a time to avoid overcrowding.
- Fry for approximately 30-40 seconds per side, or until golden brown and crispy.
- Remove the fried Suzhiyam from the oil and place them on a paper towel-lined plate to drain excess oil.
- Repeat with the remaining balls.
Serve and Enjoy
- Serve your warm, crispy Suzhiyam as a delicious snack or dessert. Enjoy!
Recipe Notes
Expert Tips for Perfect Suzhiyam
- For a richer flavor, toast the chana dal lightly in a pan before pressure cooking.
- Ensure the chana dal filling is completely cool before shaping into balls; otherwise, the batter will become too sticky.
- Maintain medium-low heat while frying to ensure the Suzhiyam cooks through and achieves a crispy exterior without burning.
- Adjust the amount of jaggery based on your preference for sweetness. You can also experiment by adding a pinch of nutmeg or cinnamon to the filling.
