Ingredients
For the Halwa
- 1 cup Semolina fine semolina is best for a smoother texture., sooji, rava
- 1/2 cup Ghee
- 1 1/2 cup Sugar adjust to your desired sweetness. granulated sugar is recommended.
- 4 cup Water
- 1/4 tsp Cardamom Powder elaichi, optional, adds a warm, aromatic flavor.
- 1 pinch Saffron Strands kesar, use a good quality saffron for the best color and flavor.
Instructions
Preparing the Semolina
- Heat ghee in a heavy-bottomed pan or kadai over medium heat. Add the cashews and raisins, sautéing until lightly golden. Add the semolina and roast, stirring constantly, until fragrant and lightly golden, about 7-8 minutes. Add the cardamom powder and continue to roast for another minute. Remove from heat.
Making the Sugar Syrup
- In a separate saucepan, combine the sugar, water, and saffron strands. Bring to a boil, stirring until the sugar dissolves completely. Reduce heat and simmer for 2-3 minutes, allowing the saffron to infuse and the syrup to slightly thicken.
Combining and Cooking
- Slowly pour the hot sugar syrup into the roasted semolina mixture, stirring constantly to prevent lumps from forming. Continue stirring until the mixture thickens and pulls away from the sides of the pan. This takes about 5-7 minutes.
Resting and Serving
- Remove from heat and cover the pan for 5 minutes to allow the halwa to steam and soften. Serve warm or at room temperature. Garnish with additional cashews and raisins if desired.
