Ingredients
For the Rava Kesari
- 1 cup Semolina rava or sooji
- 3/4 cup Sugar
- 2 1/2 cup Water
- 1/4 tsp Cardamom Powder
- 1 1/2 pinch Saffron Strands
Instructions
- In a pan or skillet, heat the ghee over medium heat.
- Add the cashews, almonds, and raisins to the pan. Roast them, stirring frequently, until they turn golden brown and fragrant. This enhances their nutty flavor and adds a pleasant crunch to the Kesari.
- Remove the roasted nuts and raisins from the pan and set them aside.
- Add the semolina to the same pan and roast it over medium heat for 10-15 minutes, stirring constantly, until it turns light golden brown and releases a toasty aroma. Roasting the semolina is crucial for developing its flavor and achieving a smooth texture in the final dish.
- In a separate saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely.
- Continue to simmer the sugar syrup for about 10 minutes, or until it slightly thickens. This creates a light syrup that will bind the semolina and provide sweetness.
- Add the saffron strands to the sugar syrup. The saffron will infuse the syrup with its vibrant color and distinct flavor.
- Carefully pour the hot sugar syrup into the roasted semolina, stirring continuously to prevent lumps. The mixture will thicken as the semolina absorbs the syrup.
- Add the cardamom powder and the roasted nuts and raisins to the semolina mixture. Stir well to combine all the ingredients.
- Continue to cook for a minute or two, stirring gently, until the Rava Kesari reaches a smooth and creamy consistency.
- Serve the Rava Kesari warm, garnished with a few extra roasted nuts and raisins, if desired.
Recipe Notes
Good To Know
- To achieve a rich, vibrant color without artificial additives, soak a few saffron strands in warm milk and add this mixture along with the water for a beautiful golden hue and subtle aroma.
- For an added layer of flavor, toast the cashews, almonds, and raisins in ghee until golden and fragrant, then fold them in at the very end to preserve their crunch.
- If you prefer a softer, pudding-like texture, increase the water ratio slightly (up to 2.5 cups of water for every 1 cup of rava) and cook on low heat, stirring continuously to avoid lumps.
- For a vegan variation, substitute ghee with coconut oil and use plant-based milk for soaking saffron; this imparts a delicate coconut undertone that complements the cardamom and nuts.
Expert Tips
- For a richer flavor, roast the rava in ghee before adding the water. This enhances the nutty notes and adds depth to the dish.
- Adjust the sweetness according to your preference by adding more or less sugar. Taste and adjust before serving.
- Garnish with chopped fresh cilantro or toasted coconut flakes for added visual appeal and flavor.
Storage Instructions
- Store leftover rava kesari in an airtight container in the refrigerator for up to 3 days. Gently reheat in the microwave or on the stovetop before serving.
