  • First, make the pineapple puree. In a food processor or blender, combine 3/4 cup of chopped pineapple and blend until smooth. You should have about 1/2 cup of puree. Set aside.
  • In a wide pan, heat 2 tablespoons of ghee over medium heat. Add the cashews and sauté until golden brown and fragrant. This enhances their nutty flavor. Set the toasted cashews aside.
  • In the same pan, add the remaining ghee and the semolina. Roast the semolina over low to medium heat for 3-4 minutes, stirring constantly, until it turns a light golden color and releases a toasty aroma. Roasting the semolina deepens its flavor and creates a better texture for the kesari.
  • Meanwhile, bring 1 1/2 cups of water to a boil in a separate pot. Add a pinch of yellow food coloring or saffron to the boiling water, if desired.
  • Once the semolina is roasted, add the pineapple puree and mix well to combine. Then, carefully pour the boiling water into the semolina mixture. Stir continuously to prevent lumps from forming.
  • Continue to cook over medium heat, stirring frequently, until the water is absorbed and the semolina is fully cooked. The mixture should start to thicken.
  • Add the sugar and stir well to dissolve. The mixture will become slightly more liquid. Continue cooking and stirring until the mixture thickens again.
  • Once the kesari starts to pull away from the sides of the pan and reaches a thick, pudding-like consistency, stir in the ground cardamom and toasted cashews. This adds warmth and crunch.
  • Remove from the heat. The fragrant and delicious Pineapple Rava Kesari is ready to serve warm. Enjoy!
