Ingredients
For the Pav Bhaji
- 4 tbsp Butter
- 1 tsp Cumin Seeds
- 1 medium Bell Peppers bell pepper, finely chopped
- 1 medium Onion finely chopped
- 2 tbsp Ginger-Garlic Paste
- 4 medium Potatoes approximately 350g, boiled and mashed
- 6 medium Tomatoes approximately 500g, pureed
- 1/2 cup Peas fresh or frozen, green
- 1/4 cup Coriander finely chopped
- 4 tbsp Pav Bhaji Masala store-bought or homemade
- 1 tsp Coriander Powder
- 1 tsp Cumin Powder
- 1/2 tsp Garam Masala
- 1 tbsp Dried Fenugreek Leaf dried fenugreek leaves
- 1 Lemon
- 2 Chilies adjust to taste, or 1-2 tsp red chili powder, red
- 400 ml Water as needed
For Serving
- 6-8 Pav Rolls bread rolls
Instructions
Prepare the Vegetables
- Finely chop the onion, capsicum, coriander leaves, and boiled potatoes. If using fresh peas, cook them until tender. Frozen peas can be used directly.
Make the Pav Bhaji
- Heat butter in a large pan or tava over medium heat. Add cumin seeds and capsicum, cooking for about a minute.
- Add the chopped onions and salt, cooking until softened. Stir in the ginger-garlic paste and sauté until the raw smell disappears.
- Add the pureed tomatoes, green peas, and chopped potatoes. Mix well. Cook, covered, for 10-15 minutes, allowing the vegetables to soften and release their juices.
- Mash the vegetables thoroughly to create a smooth puree. There should be no large chunks remaining.
- Stir in the garam masala, coriander powder, cumin powder, pav bhaji masala, and kasuri methi. Mix well.
- Season with salt to taste, and squeeze in the juice of half a lemon. Continue mashing, adding water as needed to achieve the desired consistency. The smoother the better!
- Stir in 1 tbsp of butter. Mash again for a final time and set aside.
Prepare the Garnish
- In a separate pan, melt butter. Add finely chopped onions and capsicum, sautéing until soft.
- Add red chili paste (adjust to taste) and cook until the oil separates.
- Stir in 1 tsp pav bhaji masala and some chopped coriander. Add a little water and cook for a minute.
Combine and Serve
- Add the cooked pav bhaji to the pan with the onion-capsicum garnish. Mix well and mash gently. Adjust seasoning as needed.
- Garnish with fresh coriander and a pat of butter. Serve hot with pav rolls.

Expert Tips for the Perfect Pav Bhaji
- For a richer flavor, use a combination of unsalted and salted butter.
- If you don't have pav bhaji masala, you can easily make your own using a blend of spices like turmeric, cumin, coriander, garam masala, and a touch of chili powder.
- To enhance the color, add a pinch of turmeric powder to the bhaji along with other spices.
- Don't be afraid to adjust the spices to your liking. Some prefer a spicier bhaji, while others prefer a milder version.
