  • 2 cup Potato boiled and mashed
  • 1 medium head Cauliflower grated
  • 1 medium Bell Peppers capsicum, finely chopped
  • 1 large Onion finely chopped; reserve some for garnish
  • 1 cup Tomato finely chopped

Sauté Aromatics

  • Heat oil in a non-stick pan. Add half of the chopped onions and sauté until golden brown. Add ginger-garlic paste and sauté for another minute until fragrant.

Add Vegetables and Spices

  • Add the grated cauliflower and sauté briefly. Stir in the mashed potatoes, chopped tomatoes, and tomato puree. Mix well to combine.

Simmer and Cook

  • Add the bell pepper and water. Cover and cook for 3-4 minutes, allowing the vegetables to soften and the flavors to meld.

Season and Finish

  • Stir in the pav bhaji masala, red chili powder, and salt. Adjust the seasoning to your preference. Add the lemon juice (if using) and mix well.

Final Touches
