Prepare the Mutton Masala

  • Heat 1/4 cup vegetable oil in a pressure cooker. Add cloves, cinnamon, cardamom, and bay leaf; sauté for 1 minute. Add chopped onions and sauté until light brown. Add ginger-garlic paste and crushed green chilies; sauté until fragrant. Add chopped tomatoes and sauté until soft. Stir in turmeric powder. Add mutton, sauté for 1 minute. Add yogurt and salt; mix well. Pressure cook on medium-high for 15 minutes, then simmer for 5-10 minutes. Release pressure, add lemon juice and coriander; boil for 1 minute. Set aside.

Prepare the Ghee Rice

  • Wash and drain basmati rice. Heat 1/2 cup desi ghee and 1/2 cup oil in a pan. Add cardamom, cinnamon, cloves, bay leaf, and peppercorns; sauté for 1 minute. Add half of the julienned onions; fry until golden brown. Add drained rice and sauté until shiny and crisp (grains should break easily when tested). Add hot water, salt, and mix well. Cook covered on high heat for 2-3 minutes, then reduce heat to medium-low, stirring occasionally, until all water is absorbed and rice is cooked through.

Fry the Garnish

  • Heat remaining 2 tbsp ghee. Fry remaining julienned onions until light brown. Add raisins; cook until plump. Add cashews; fry until golden brown. Set aside.

Assemble and Dum Cook the Biryani

  • In a large, deep, non-stick pan, layer mutton masala and ghee rice, sprinkling 1/2 tsp garam masala between each layer. End with a rice layer and sprinkle with garam masala. Cover the pan with a lid (place a smaller lid underneath for even cooking), and cook on low heat for 30 minutes, or until condensation forms on the lid.

Garnish and Serve

  • Garnish with fried onions, raisins, and cashews. Serve hot with pickle, raita, and mint chutney.
