Ingredients
For the Red Masala Paste
For the White Masala Paste
- 1/4 cup Coconut shredded
- 2 Garlic cloves
- 2 tbsp Gram Flour roasted
- 1-2 tbsp Water for grinding
For the Mutton Kulambu
- 500 gm Mutton boneless, cut into 1-inch cubes
- 3 tbsp Oil for cooking
- 1/2 tsp Mustard Seed rai
- 1 large Onion sliced
- 1 tbsp Ginger-Garlic Paste
- 2 Chili green, slit
- 1.5 sprigs Curry Leaf
- 2 tsp Salt or to taste
- 3 tbsp Coconut pieces, cut into small pieces, fresh
- 1 cup Water or as needed
Instructions
Prepare the Red Masala Paste
- Heat oil in a pan. Add the cleaned pearl onions and fry for 5 minutes.
- Add garlic, fry for 2 minutes. Add coriander seeds, cumin seeds, poppy seeds, cinnamon, and red chilies. Fry for 3 minutes. Add ginger (optional) and allow to cool.
- Grind the masala finely without adding water. Set aside.
Prepare the White Masala Paste
- In a blender, combine shredded coconut, garlic cloves, roasted gram flour, and 1-2 tbsp water. Blend to a smooth paste. Set aside.
Cook the Mutton Kulambu
- Heat oil in a heavy-bottomed pan. Add mustard seeds. Once they splutter, add sliced onions and fry for 1 minute.
- Add ginger-garlic paste, green chilies, and curry leaves. Fry for another minute.
- Add the mutton and fry until the pieces increase in size and change color.
- Add salt and the prepared red masala paste. Mix well and fry for 5 minutes.
- Add water to fully cover the mutton. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes, or until the mutton is tender. Check the water level occasionally to prevent drying.
- Add the white masala paste and coconut pieces. Mix well and simmer until the raw smell disappears.
- Check seasoning and adjust salt or spice as needed. You can add more spice with mutton masala powder if you prefer.
