Ingredients
 

For the Rice

  • 1/2 cup Basmati Rice use high-quality basmati rice for best results. you can substitute with other long grain rice.

For the Kheer

  • 1 ltr Milk use full-fat milk for a richer, creamier kheer.
  • 2 tbsp Ghee desi ghee is preferred for its distinctive aroma and flavor.
  • 1/2 cup Sugar adjust to your preferred level of sweetness.
  • 1 tsp Cardamom Powder freshly ground cardamom is ideal for the best aroma. also known as elaichi.
  • 1/4 cup Cashews lightly fried for enhanced flavor and texture.
  • 1 cup Water

Optional additions

  • 1 tbsp Rose Water for an extra floral touch (optional).
  • 1/4 tsp Pistachios chopped (optional)

Instructions
 

Prepare the Rice

  • Rinse the basmati rice thoroughly under cold water until the water runs clear. Drain completely and let it sit for 10 minutes to dry slightly. Coarsely grind the semi-dry rice using a grinder or food processor.

Toast the Rice and Spices

  • Heat ghee in a heavy-bottomed pan or pot over medium heat. Add a teaspoon of sugar and cook until it caramelizes lightly, turning a light brown color. Add the ground rice and fry for 1-2 minutes, stirring constantly, until lightly toasted and fragrant.

Cook the Kheer

  • Add the water to the pan, followed by the milk. Stir well and bring to a simmer over low heat. Cook, stirring occasionally, until the rice is cooked through and the kheer has thickened slightly (about 20-25 minutes). Stir in the remaining sugar and cardamom powder. Continue to cook for another 5-7 minutes, stirring gently to prevent sticking. Stir in the fried cashews and optional pistachios and rose water.

Serve and Enjoy

  • Remove the kheer from the heat and let it cool slightly. Serve warm or chilled. Garnish with additional cashews or pistachios if desired.
