Ingredients
- 150 gm Noodles or egg egg
- 2 tbsp Oil
- 1 tsp Ginger and garlic minced
- cubes Onion cut into
- 3.5 Chilli green, slit into half
- 1/4 cup Spring Onions or white white part sliced
- 1/4 cup Carrot julienned
- 1/4 cup Bell Peppers cut into thin stripes
- 2 Eggs whisked
- 1 cup Chicken boiled shredded
- 1 tbsp Soy Sauce
- 1 tsp Vinegar
- 1 tsp Chilli Sauce green
- 1.5 tsp Salt or as per taste
- 1/2 tsp Pepper black
- 2 tbsp Spring Onion Greens chopped
Instructions
Prepare the Chicken and Noodles
- Cook noodles according to package directions. Meanwhile, cook chicken until fully cooked. Shred or dice the cooked chicken.
Stir-Fry the Aromatics
- Heat oil in a wok or large skillet over medium-high heat. Add ginger-garlic paste and sauté for 30 seconds until fragrant.
Add Vegetables
- Add onion and green chilies, and stir-fry for 1 minute until softened. Add carrots and bell peppers, stir-fry for another minute.
Add Eggs and Chicken
- Push the vegetables to one side of the wok, add the whisked eggs and scramble. Mix everything together and then stir in the shredded chicken.
Combine and Season
- Add the cooked noodles, soy sauce, rice vinegar, green chili sauce, salt, and pepper. Toss everything to combine thoroughly. Ensure the noodles are well coated with the sauce.
Garnish and Serve
- Garnish with chopped spring onion greens. Serve hot and enjoy!
