Prepare the Mutton

  • Wash the mutton thoroughly. In a bowl, marinate the mutton with yogurt, 1 tsp salt, and turmeric powder. Set aside for at least 30 minutes, or preferably longer in the refrigerator.

Make the Spice Paste

  • Peel and finely chop the ginger and garlic. Remove the stems from the green chilies. Combine these ingredients in a food processor or blender and pulse until you have a coarse paste. Do not over-process.

Sauté Aromatics

  • Heat the mustard oil in a large, heavy-bottomed pot or wok over medium-high heat until it begins to smoke slightly. Add the bay leaves and caraway seeds. Sauté for about 10 seconds until fragrant.

Brown the Mutton

  • Add the ginger-garlic-chili paste to the pot. Fry for 3-4 minutes, stirring occasionally, until fragrant. Add the marinated mutton pieces and stir well to coat them with the paste. Cook, covered, for 6-7 minutes, allowing the mutton to release its juices.

Simmer the Curry

  • Remove the lid, stir gently, and continue to cook until most of the liquid has evaporated. Add the meat masala, nutmeg, red chili powder, and the remaining 0.5 tsp salt. Mix well and adjust seasoning as needed.

Add Water and Cashews

  • If the masala starts to stick, add a little water (1/4 cup at a time). Cover the pot again and cook for 20-25 minutes, stirring occasionally. Open the lid, stir in the cashew paste, and cook for another 3-4 minutes. Turn off the heat.

Serve

  • Serve your delicious Bhuna Gosht hot with roti, naan, or paratha.
