Ingredients
Rice and Grains
- 200 gm Basmati Rice long-grain basmati rice is recommended for best results.
- 50 gm Raisins
Spices and Aromatics
- 2 leaves Bay Leaves
- 1 tsp Peppercorns whole peppercorns, black, lightly crushed.
- 1 tsp Garam Masala a pre-made blend, cinnamon, cloves etc., coriander, or you can create your own with cumin
Fats and Liquids
- 2 tbsp Ghee clarified butter; homemade is preferred.
- 1/2 tsp Saffron Strands
- 1 cup Water plus extra as needed

- 1.5 tsp Salt or to taste

- Wash and soak the basmati rice in cold water for at least 30 minutes. Soak the saffron strands in 2 tablespoons of warm water.
Cooking the Rice
- In a pot, bring water to a boil. Add the soaked rice and cook until it's about 70-80% done (al dente). Drain the rice thoroughly and set aside.

- Heat the desi ghee in a large pan or pot over medium heat. Add the bay leaves, garam masala, and crushed peppercorns. Sauté for 1 minute until fragrant.
