Ingredients
For the Dhoka Cakes:
- 1 cup Split Chickpea split chickpeas; also known as bengal gram. soak overnight.
- 1 tsp Nigella Seeds also known as kalonji.
- 1/2 tsp Turmeric Powder
- 1.5 tsp Salt adjust to taste
- 2 tbsp Vegetable Oil for frying the dhoka
For the Dalna Curry:
- 2 Tomatoes chopped
- 1 tsp Ginger Paste
- 1 tsp Cumin Seeds also known as jeera.
- 1 tsp Chili Powder red
- 1/4 tsp Garam Masala a blend of cloves, and cardamom. you can find pre-made blends or make your own., cinnamon
- 2 Chilies dried, red
- 2 tbsp Vegetable Oil for the curry
- 1 cup Water or more, as needed for desired consistency
Instructions
Prepare the Dhoka Cakes
- Soak the chana dal overnight. Drain and blend into a smooth paste using very little water.
- Heat 2 tablespoons of oil in a non-stick pan. Add nigella seeds and let them splutter.
- Add the chana dal paste and salt. Cook until the mixture is dry and forms a doughy consistency.
- Spread the dough thinly on a flat surface and cut into diamond shapes.
- Deep fry the dhoka pieces until golden brown and set aside.
Prepare the Dalna Curry
- Heat 2 tablespoons of oil in a pan. Add dried red chilies and cumin seeds. Sauté until fragrant.
- Add chopped tomatoes and cook until soft and mushy.
- Stir in the ginger paste and cook for a minute.
- Add red chili powder, turmeric powder, and garam masala. Cook until the spices release their oil.
- Add water and bring to a boil. Simmer for a few minutes to allow the flavors to meld.
- Gently add the fried dhoka cakes to the curry. Simmer for another 5 minutes.
- Serve hot with rice or roti.
