Ingredients
For the Ladoos

- 9 pod Cardamom Pods crushed and ground, green
- 1/2 Star Anise crushed and ground, or 1/2 tsp ground nutmeg

Instructions
- In a saucepan, bring the milk to a boil. Reduce heat and simmer until the milk is reduced by half. This concentrates the milk's flavor and helps the ladoos bind.
- In a separate frying pan, heat 1 tsp of ghee. Add the walnuts and roast over low heat until golden brown and fragrant. Set aside. Toasting enhances the nuts' flavor and adds a pleasant crunch.
- In the same pan, heat the remaining ghee. Add the grated coconut and sauté over medium heat for 3-4 minutes, stirring frequently. This toasts the coconut, intensifying its flavor and removing excess moisture.
- Add the sugar to the coconut mixture and stir well. Continue to cook for 10-15 minutes, stirring constantly to prevent burning. The mixture will thicken as the sugar melts and the coconut dries out.
- Pour the reduced milk into the coconut-sugar mixture. Cook over low-medium heat, stirring continuously, until the mixture thickens and pulls away from the sides of the pan. This indicates that most of the moisture has evaporated.
- Remove the pan from the heat and stir in the ground cardamom, star anise (or nutmeg), and toasted nuts. Be careful not to overcook the mixture at this stage, as it can become dry and crumbly.
- Let the mixture cool slightly, about 10 minutes, until it's warm to the touch but not hot. Roll small portions of the mixture between your palms to form round ladoos. They will firm up as they cool completely.
- Serve the ladoos immediately or store them in an airtight container in the refrigerator for up to 5 days. They are best enjoyed at room temperature.
