Ingredients
Aromatics & Spices
- 1 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 1/4 tsp Fenugreek Seeds
- 2 Chilies green, slit
- 2 Chilies adjust to taste, dry, red
- 1 tbsp Curry Leaves
- 1 tbsp Ginger Garlic Paste
- 1 tbsp Chili Powder adjust to taste, red
- 2 pinch Turmeric Powder
- Salt to taste
Vegetables & Coconut
- 2 cup Pumpkin cubed
- 3-4 Onions small, whole
- 1 tbsp Onion Paste
- 1 cup Coconut freshly grated
- 1/2 cup Tomato Puree
Other Ingredients
- 1/4 cup Tamarind Juice
- 2 tbsp Jaggery
- 2 tbsp Oil vegetable or coconut oil
- Coriander for garnish
Instructions
Preparing the Spice Base
- Heat oil in a pan. Add mustard seeds. Once they splutter, add cumin seeds, fenugreek seeds, green chilies, red chilies, curry leaves, and ginger-garlic paste. Sauté for 1 minute.
Cooking the Pumpkin and Onions
- Add the pumpkin cubes, whole small onions, and onion paste. Fry until onions are translucent.
Adding Spices and Cooking
- Stir in salt, turmeric powder, jaggery, and red chili powder. Mix well, cover, and cook on low heat for 7 minutes.
Incorporating Coconut and Tamarind
- Once the pumpkin is cooked and the raw smell is gone, add the grated coconut, tomato puree, and tamarind juice.
Simmering and Finishing
- Cook on low heat for another 5 minutes. The stew will develop a delicious balance of sweet and sour flavors.
