  • 7 Chillies green, slit lengthwise
  • 10 Shallots finely chopped, or small onions
  • 1 Lemon juiced
  • 1 1/2 tsp Salt or to taste

  • First, make the coconut milk. Shred the coconuts and blend them with a small amount of water until smooth. Strain this mixture through a fine-mesh sieve or cheesecloth to extract about 1 cup of thick coconut milk. Set this aside. Return the coconut solids to the blender, add more water, and blend again. Strain to obtain about 3 cups of thin coconut milk.

  • Cook the moong dal until soft. You can pressure cook it for speed or simmer it in a pot until tender. Set the cooked dal aside.
  • Heat 2 teaspoons of oil in a large pan over medium heat. Add the slit green chilies, chopped shallots (or small onions), and sauté until fragrant and lightly softened. This builds the flavor base of the stew.
