Ingredients
Fish
- 1 kg Rohu Fish
Aromatics and Spices
- 2 tbsp Onion Paste
- 1 tsp Garlic Paste
- 1 tsp Fenugreek Seeds methi dana
- 1 tsp Turmeric Powder
- 2 tsp Coriander Powder
- 2 tsp Chili Powder red
- 1/4 tsp Garam Masala
- 1 tsp Dried Fenugreek Leaf
Other Ingredients
- 2 tbsp Tomato Puree
- 2 tbsp Oil
- 1 tsp Fenugreek Leaves fresh
- Salt to taste
- 4 cup Water
Instructions
- Clean the Rohu fish thoroughly under cold water. Pat dry.
- Heat the oil in a large pot or kadai over medium heat. Add the fenugreek seeds and let them sizzle for a few seconds. This releases their aromatic oils.
- Add the onion and garlic pastes to the pot. Sauté until golden brown, stirring occasionally.
- Add the turmeric powder, coriander powder, and red chili powder. Sauté for another minute until fragrant. This step blooms the spices and enhances their flavor.
- Stir in the tomato puree and cook for about 5 minutes, or until the oil starts to separate from the mixture. This indicates that the puree is cooked and the flavors have melded.
- Add the Kasuri Methi and salt. Gently place the fish into the pot. Be careful not to break it.
- Pour in the water and bring the curry to a simmer. Reduce the heat to low, cover, and cook for 10 minutes, or until the fish is cooked through.
- Remove from heat and stir in the garam masala. Garnish with fresh fenugreek leaves.
- Serve hot with boiled rice or chapatis.
Recipe Notes
Good To Know
- Marinate the Rohu fish with a little salt and turmeric for 15-20 minutes before cooking to help firm up the flesh and infuse it with flavor, preventing it from breaking apart during simmering.
- For a deeper, smoky aroma, briefly fry the onion and garlic pastes until golden brown before adding the tomato puree; this caramelization enhances both bitterness and sweetness, adding complexity to the curry.
- If you prefer a crunchier texture, lightly pan-sear the fish on both sides before adding it to the curry, which also helps seal in moisture and flavor.
- To balance the sour and spicy notes, finish the curry with a splash of tamarind water or a squeeze of fresh lime just before serving; this heightens the tang and makes the dish taste fresher.
Expert Tips
- For a richer curry, use fish stock or bone broth instead of water.
- Adjust the amount of chili to your preference for a milder or spicier dish. Fresh green chilies add a vibrant, grassy heat, while dried red chilies provide a deeper, earthier spice.
- Serve the Rohu fish curry with steamed rice, naan bread, or roti for a complete and satisfying meal.
Storage Instructions
- Store leftover curry in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
