  • In a bowl, combine the rohu fish, 1/2 tbsp turmeric powder, and 1 1/2 tsp salt. Gently mix to coat the fish evenly.
  • Heat the oil in a large skillet or kadai over medium-high heat. Add the marinated fish and fry until lightly golden brown on both sides. This helps seal in the juices and adds flavor. Remove the fish from the skillet and set aside.
  • In the same skillet, add the ginger-garlic paste and sauté for about a minute until fragrant. Be careful not to burn the paste, as this can impart a bitter flavor.
  • Add the slit green chilies and 1/4 tsp turmeric powder to the skillet. Sauté for another 30 seconds until the spices are fragrant.
  • Pour in about 1/2 cup of water and bring to a simmer. This creates the base for the curry sauce.
  • Gently place the fried fish back into the skillet. Reduce the heat to low, cover, and simmer for 10 minutes. This allows the fish to cook through and absorb the flavors of the sauce.
  • Add the freshly squeezed musambi juice and salt to taste. Simmer uncovered for another 5 minutes, allowing the sauce to thicken slightly and the musambi flavor to meld with the fish.
  • Serve hot with steamed rice. Garnish with fresh cilantro, if desired.
