Ingredients
Coffee Caramel Filling
- 2 Tbsp Leo Breakfast Blend Coffee Decoction
- ½ cup Cane Sugar
- 2 Tbsp Butter
- ¼ cup Heavy Cream
- ⅓ cup Desiccated Coconut
- ¼ cup Peanuts roasted
Dough
- 200 gm Whole Wheat Flour whole
- 25 gm Semolina Flour
- 10 gm Milk Powder
- 2 Tbsp Sugar
- 1 tsp Salt
- ¾ tsp Yeast instant
- ¾ cup Milk
- ¾ cup Water
- 2 Tbsp Olive Oil
Instructions
Make the Coffee Caramel Filling
- In a heavy-bottomed pan over medium heat, melt the cane sugar, stirring constantly. The sugar will clump and eventually melt into an amber-colored liquid.
- Once the sugar melts, immediately whisk in the butter. The mixture will bubble, so be cautious. Whisking ensures even incorporation.
- Slowly pour in the heavy cream while stirring constantly. The mixture will bubble vigorously. Bring to a boil for 1 minute.
- Stir in the coffee decoction, desiccated coconut, and roasted peanuts. Mix well to combine. Remove from heat and let cool completely.
Make the Dough
- In a large bowl, combine the whole wheat flour, semolina flour, milk powder, sugar, and instant yeast.
- Gradually add the milk and water mixture to the dry ingredients, mixing until a soft dough forms. Add the salt and 1 tablespoon of olive oil. Kneading will develop the gluten, resulting in a soft and airy bun.
- Turn the dough out onto a lightly floured surface. Knead for 12-15 minutes, adding the remaining olive oil as you knead, until the dough becomes smooth and elastic. It should spring back when poked.
- Place the dough in a well-oiled bowl, cover with cling wrap, and let rise in a warm place for about 1-2 hours, or until doubled in size.
- Punch down the dough to release the air. Divide it into 6 equal pieces.
Assemble and Bake
- Roll each piece of dough into an oval or circle. Place a spoonful of the cooled coffee caramel filling slightly above the center of each rolled-out dough.
- Fold the top of the dough over the filling and seal the edges firmly. Using a sharp knife or pizza cutter, make longitudinal slits just below the folded edge, creating strips.
- Twist each strip and place it over the folded portion, creating a flower-like design.
- Place the shaped buns on a baking sheet lined with parchment paper. Cover with a damp cloth and let rise for another 30 minutes.
- Preheat oven to 350°F (175°C). Brush the buns with milk and bake for 25 minutes.
- Remove from the oven, brush again with milk, and return to the oven for another 5-7 minutes to achieve a golden brown crust.
- Remove the buns from the oven and brush with melted butter while still warm. This adds flavor and keeps the crust soft.
- Serve warm and enjoy with a cup of coffee.
