Ingredients
Mangoes
- 6 Mango alphonso or similar variety recommended, ripe
Spices & Aromatics
- 2 Chili finely slit, green
- 2 Chili adjust to taste, dry, red
- 1 tsp Mustard Seed rai
- 1/2 tsp Gram black, split, urad dal
- 1 pinch Asafoetida hing
Fat & Liquid
- 1 tbsp Coconut Oil or ghee
- 1/2 cup Water as needed, or more
Instructions
Prepare the Mangoes
- Wash mangoes thoroughly. Peel them, ensuring to retain as much pulp as possible from the skin. Place peeled mangoes in a saucepan and set aside the peels.
Extract Mango Pulp from Peels
- Place mango peels in a bowl and add about 1/4 cup of water. Squeeze the peels vigorously to extract remaining pulp. Transfer this water to the saucepan with the peeled mangoes. Repeat this process until the water runs clear.
Cook the Mangoes
- Add slit green chillies to the saucepan. Bring to a boil over medium heat, then reduce heat and simmer for 10-15 minutes until mangoes are soft.
Add Jaggery and Seasoning
- Add jaggery and salt to taste. Mix well and simmer for another 5 minutes, or until desired consistency is reached. For a thicker gravy, whisk together 2-3 tsp rice flour with 1/4 cup water and add to the simmering curry until thickened.
Temper the Curry
- In a small pan, heat coconut oil (or ghee). Add mustard seeds and sauté until they splutter. Add urad dal, dry red chillies, and asafoetida. Sauté briefly.
Combine and Serve
- Immediately add the tempering to the mango curry and stir well. Your Ambe Upkari is ready! Serve hot with rice, dal, and a vegetable stir-fry.
