Ingredients
 

Dry Ingredients

  • 1 cup Coconut desiccated
  • 1 cup Gram black, split, urad dal
  • 2 cup Curry Leaves approximately 4 cups of packed leaves, fresh
  • 1/2 cup Chilies adjust to your spice preference, dried, red
  • 1 Tamarind about 1 inch piece, pitted
  • 1 tbsp Jaggery or to taste
  • 1.5 tsp Salt or to taste

Instructions
 

Prepare the Curry Leaves

  • Wash the curry leaves thoroughly and pat them dry with a clean kitchen towel. Separate the leaves from the stems.

Dry Roast the Ingredients

  • Heat a heavy-bottomed pan over medium heat. Add the curry leaves and dry roast until crisp and fragrant. Remove and set aside.
  • Dry roast the desiccated coconut for about 2 minutes, stirring constantly, until lightly browned.
  • Dry roast the urad dal until fragrant and lightly browned, stirring frequently to prevent burning.
  • In the same pan, add 1 teaspoon of oil and gently roast the dried red chilies until fragrant (be careful not to burn them).
  • Add the tamarind and roast briefly until slightly crisp.

Grind the Spice Blend

  • Allow all the roasted ingredients to cool completely. In a spice grinder or food processor, grind the coconut and red chilies together to a coarse powder. Add the roasted urad dal and curry leaves and pulse until a coarse powder forms. Add the salt, tamarind, and jaggery. Grind again to a slightly coarse powder. Do not over-grind, as a slightly coarse texture is desired.

Temper the Powder

  • Heat the remaining 1 teaspoon of oil in a small pan. Add the asafoetida and let it bloom for a few seconds. Immediately add the ground spice mixture and stir well for about a minute to combine. Remove from heat.

Store and Enjoy

  • Allow the curry leaf powder to cool completely before transferring it to an airtight container. Store in a cool, dark, and dry place for up to 6 months.
  • Your homemade curry leaf powder is now ready to use! Sprinkle generously over your favorite South Indian dishes.
