Ingredients
- 1-2 tbsp Chili Powder adjust to your spice preference, red
- 1 tsp Turmeric
- 1 tsp Salt or to taste
- 1 cup Gram Flour also known as besan
- 1/2 - 3/4 cup Water enough to make a smooth paste
- 2 tbsp Jaggery also known as gud, or to taste
- 2 tbsp Desiccated Coconut
- 1 tbsp Sesame Seeds also known as til, white
- 12-15 Colocasia Leaves also known as alu wadi patta, large, tender leaves; wash thoroughly
- 1/4 cup Vegetable Oil for frying
Instructions
Prepare the Colocasia Leaves
- Wash the colocasia leaves thoroughly and pat them completely dry with a clean kitchen towel. Ensure they are free from any excess moisture for optimal rolling.
Make the Gram Flour Paste
- In a mixing bowl, whisk together gram flour (besan), red chili powder, turmeric powder, salt, jaggery (or brown sugar), desiccated coconut, and white sesame seeds. Gradually add water while whisking continuously until a smooth, easily spreadable paste forms. Adjust the consistency as needed.
Assemble and Steam the Rolls
- Spread a thin, even layer of the gram flour paste onto each colocasia leaf. Starting from the stem end, roll each leaf tightly into a cylindrical shape. Steam the rolls in a steamer basket for 15-20 minutes, or until they are cooked through and tender. Ensure sufficient water in the steamer base to prevent burning.
Fry and Garnish
- Allow the steamed rolls to cool completely before handling. Heat vegetable oil in a pan over medium heat. Carefully slice the cooled rolls into smaller, more manageable pieces. Fry the sliced rolls until they are golden brown and crispy. Garnish with fresh coconut flakes and chopped cilantro for an extra touch of flavor and visual appeal. Serve hot and enjoy!
Recipe Notes
Expert Tips
- For extra flavor, add a pinch of asafoetida (hing) to the gram flour paste.
- If your colocasia leaves are large, you may need to cut them in half before spreading the paste.
- Don't overcrowd the pan when frying; fry in batches to ensure even browning and crispiness.
- Adjust the amount of red chili powder according to your spice preference. For a milder version, reduce the quantity or substitute with a less pungent chili powder.
