Ingredients
 

For the Potatoes

  • 2 Potato boiled and peeled, large

For the Raita

  • 500 gm Yogurt greek yogurt recommended; can also use whipped curd, full-fat, plain
  • 1 tsp Salt adjust to taste
  • 1 tsp Cumin Seeds roasted and ground
  • 1/2 tsp Chili Powder adjust to taste, red
  • 2 Chili finely chopped, green
  • 1 tbsp Coriander chopped (cilantro), fresh

Instructions
 

Prepare the Potatoes

  • Peel and boil the potatoes until tender. Once cool enough to handle, grate the potatoes.

Make the Raita

  • In a medium bowl, combine the grated potatoes and yogurt. Mix well.

Season and Garnish

  • Add the roasted cumin powder, red chili powder, salt, chopped green chilies, and coriander. Mix gently until everything is well combined. Taste and adjust seasoning as needed.
