Ingredients
Okra Preparation
- 300 gm Okra bhindi; wash and trim ends thoroughly. consider lightly patting dry for better browning.
Spices & Aromatics
- 1/2 tsp Mustard Seeds rai
- 3 Chili finely chopped; adjust quantity to your spice preference, green
- 1/2 tsp Turmeric Powder optional, adds color and flavor
- 1/2 tsp Cumin Powder optional, adds depth of flavor
- 10-12 Curry Leaves a few sprigs; adds a distinctive aroma
Seasoning & Oil
- 1.5 tsp Salt adjust to taste
- 1/4 cup Vegetable Oil or any cooking oil of your choice
Instructions
Preparing the Spices
- Heat the oil in a wok or pan over medium heat. Once hot, add the mustard seeds and curry leaves. Allow the mustard seeds to splutter.
Sautéing the Aromatics
- Add the chopped green chilies and sauté for about 15 seconds until fragrant. (Optional: Add turmeric and cumin powder at this stage and saute for another 30 seconds)
Cooking the Okra
- Add the trimmed okra to the pan and stir well to coat with the oil and spices. Cook on medium-low heat for 5-7 minutes, stirring occasionally, until the okra is tender-crisp.
Seasoning and Finishing
- Add salt, and stir well to combine. Increase the heat to medium-high for 2-3 minutes to allow excess moisture to evaporate. Do not overcook; you want the okra to retain some texture.
Serving
- Remove from heat and serve hot as a side dish with roti, rice, or dal.
