Instructions

Preparing the Spices

  • Heat the oil in a wok or pan over medium heat. Once hot, add the mustard seeds and curry leaves. Allow the mustard seeds to splutter.

Sautéing the Aromatics

  • Add the chopped green chilies and sauté for about 15 seconds until fragrant. (Optional: Add turmeric and cumin powder at this stage and saute for another 30 seconds)

Cooking the Okra

  • Add the trimmed okra to the pan and stir well to coat with the oil and spices. Cook on medium-low heat for 5-7 minutes, stirring occasionally, until the okra is tender-crisp.

Seasoning and Finishing

  • Add salt, and stir well to combine. Increase the heat to medium-high for 2-3 minutes to allow excess moisture to evaporate. Do not overcook; you want the okra to retain some texture.

Serving

  • Remove from heat and serve hot as a side dish with roti, rice, or dal.

Recipe Notes

Expert Tips for Perfect Bhindi Masala

  • Don't overcrowd the pan: Cooking okra in batches ensures even browning and prevents steaming.
  • Low and slow is key: Cooking okra on low heat helps retain its shape and prevent it from becoming mushy.
  • Pat dry the okra: This helps in achieving a crispier texture.
  • Adjust spices to taste: Feel free to experiment with other spices like garam masala or red chili powder to customize the flavor profile.
