Ingredients
Vegetables
- 1.5 cup Pumpkin cubed, yellow
- 1 cup Gooseberry chopped
- 1 cup Ash Gourd cubed
- 1 cup Field Beans mochai, trimmed
- 1 cup Taro arbi/sepan kizhangu, peeled and cubed
- 1 cup Drumstick cut into 2-inch pieces
- 1 cup Broad Beans shelled
- 1 cup Potato peeled and cubed, sweet
- 1 cup Carrot peeled and chopped
Dal and Tamarind
- 1 cup Pigeon Pea cooked
- 1 cup Tamarind Juice from a large lemon-sized ball of tamarind
Spices and Seasoning
- 1/2 tsp Turmeric Powder
- 1 tsp Salt or to taste
- 1 tsp Jaggery grated
- 1 tsp Mustard Seeds
- 3 tbsp Oil divided
- 1/4 tsp Asafoetida
- 1 sprig Curry Leaves fresh
Curry Paste
- 3 tbsp Coriander Seeds
- 1 tbsp Chickpea split chickpeas
- 2 tsp Gram black, split black gram
- 8 Chillies dried, red
- 1/4 tsp Fenugreek Seeds methi dana
- 2 tbsp Coconut freshly, grated
Instructions
- In a pan, heat 2 tablespoons of oil. Add the coriander seeds, chana dal, urad dal, red chilies, and fenugreek seeds. Fry until golden brown. This toasting deepens the flavor of the spices. Add the grated coconut and fry until lightly browned. Remove from heat and let cool completely.
- Once cooled, grind the roasted ingredients into a smooth paste. Set aside.
- In a large pot or pressure cooker, combine the chopped vegetables, tamarind juice, turmeric powder, and salt. Add enough water to cover the vegetables. Bring to a boil, then reduce heat and simmer until the vegetables are tender. If using a pressure cooker, cook for 1-2 whistles.
- Add the cooked toor dal, asafoetida, and jaggery to the pot. Stir well and let it simmer for 3 minutes. This allows the flavors to meld.
- Add the ground curry paste to the pot and mix well. Simmer for 5 minutes, allowing the paste to cook through and the flavors to combine. Stir in fresh curry leaves for a final aromatic touch.
- In a small pan, heat the remaining 1 tablespoon of oil. Add the mustard seeds and allow them to splutter. This tempering adds a characteristic flavor and aroma. Add a few fresh curry leaves and sauté briefly. Pour the tempering over the kootu. Serve hot.

- For a more authentic festive flavor, try adding a small handful of freshly grated coconut along with a tempering of curry leaves, dried red chilies, and asafoetida after cooking—this enhances both aroma and taste.
