Rice and Liquid

  • 1 cup Rice pacharisi (short-grain rice preferred), raw
  • 2 cup Water adjust as needed for desired consistency

Instructions
 

Preparing the Rice

  • Wash the raw rice thoroughly under running water. Soak the rice in water for 10 minutes.

Cooking the Rice

  • In a saucepan, bring 2 cups of water to a boil. Add the soaked rice, cover, and simmer for about 10 minutes, or until the rice is almost cooked but still slightly firm. After 5 minutes of cooking, stir in the ground cardamom.

Incorporating the Jaggery

  • Add the crushed jaggery to the cooked rice and stir well. Cook over low heat, stirring frequently, until the jaggery dissolves completely and is well incorporated with the rice. Stir in 2 tablespoons of ghee for flavor and to prevent sticking.

Preparing the Nuts

  • In a separate pan, heat 3 tablespoons of ghee. Add the raisins and cashews and sauté until golden brown and fragrant.

Combining and Finishing

  • Gently fold the sautéed nuts into the rice and jaggery mixture. Stir in the remaining ghee and honey (if using). Mix everything thoroughly until well combined.

Serving

  • Your delicious Sweet Pongal is ready! Serve warm and enjoy.
