Baked Stuffed Bell Peppers
Baked Stuffed Bell peppers is a healthy dish which can be used as a side dish or main dish. If you are dieting it can be a whole meal with some garlic bread. It is a quick recipe, less oil, no carbohydrate. For stuffing I used chicken mince, jalapeno and smashed corn with some spices. It is topped with mozzarella cheese and some chopped cilantro, baked it and it is ready to go.

Ingredients
- 2 Bell Peppers medium size
- 1 Cup Chicken minced
- 2 tbsp Corn smashed
- 1 tbsp Jalapeno or peppers peppers
- 1/2 cup Onion sliced
- 1 tbsp Garlic Paste
- 1 tsp Black Pepper Powder
- 1/2 cup Mozzarella Cheese
- 1 tbsp Coriander chopped
- 1 tbsp Olive Oil

Instructions
- Wash the bell peppers cut thin slice from stem of both bell peppers to remove top of pepper. Clean seeds from bell peppers.
- Preheat the oven on 400 F.
- In a frying pan heat olive oil, add garlic paste and fry until light brown. Add onion and saute until translucent.
- Add minced chicken and mix it nicely, add jalapeno peppers, smashed corn,salt and pepper. Cook until chicken is done.
- Pour chicken mixture on both bell peppers, topped with mozzarella cheese and chopped cilantro.
- In a baking tray spray oil. Place bell peppers,baked it uncovered for 30 - 35 minutes or until bell peppers is tender. Serve it with garlic bread or enjoy it solely.

Very delicious recipe. If I use Paneer or Soya will the Oven temperature, still the same,
