Quinoa Tabbouleh is a Middle Eastern gluten free salad with predominant flavours of parsley and mint tossed with the quinoa. This salad is powerpacked.with proteins, minerals and.vitamins. Ingredients
  

  • Quinoa rinsed nicely 1/2 cup
  • Mint finely chopped 3-4 sprigs
  • Flat leaf parsley finely chopped 1/2 cup
  • Onion small finely chopped 1
  • Cherry tomatoes 4-5 quartered
  • Cucumber finely chopped 1
  • cloves of garlic 1 finely chopped
  • Olive oil 1 tablespoon
  • Juice of 1/2 lemon
  • Salt 1/2 teaspoon or adjust to taste
  • Water 1 cup

Instructions
 

  • Heat 1/2 tablespoon olive oil in a pan and saute quinoa well
  • Add 1 cup water and salt to the sauteed quinoa and bring to boil
  • Cover and cook on slow fire till quinoa is soft. Keep it aside to cool.
  • Once quinoa is cool, fluff it up with a fork. Add parsley, cucumber, tomatoes, mint, onions, garlic, lemon juice, and remaining olive oil.
  • Toss well and serve.
