Quinoa Tabbouleh salad can be eaten as a main dish for weight loss or as an alongside dish.
Quinoa rinsed nicely 1/2 cup
Mint finely chopped 3-4 sprigs
Flat leaf parsley finely chopped 1/2 cup
Onion small finely chopped 1
Cherry tomatoes 4-5 quartered
Cucumber finely chopped 1
Clove of garlic 1 finely chopped
Olive oil 1 tablespoon
Juice of 1/2 lemon
Salt 1/2 teaspoon or adjust to taste
Water 1 cup
Heat 1/2 tablespoon olive oil in a pan and saute quinoa well
Add 1 cup water and salt to the sauteed quinoa and bring to boil
Cover and cook on slow fire till quinoa is soft. Keep it aside to cool.
Once quinoa is cool, fluff it up with a fork. Add parsley, cucumber, tomatoes, mint, onions, garlic, lemon juice, and remaining olive oil.
Toss well and serve.
