Quinoa Tabbouleh Salad

Ingredients
- Quinoa rinsed nicely 1/2 cup
- Mint finely chopped 3-4 sprigs
- Flat leaf parsley finely chopped 1/2 cup
- Onion small finely chopped 1
- Cherry tomatoes 4-5 quartered
- Cucumber finely chopped 1
- cloves of garlic 1 finely chopped
- Olive oil 1 tablespoon
- Juice of 1/2 lemon
- Salt 1/2 teaspoon or adjust to taste
- Water 1 cup
Instructions
- Heat 1/2 tablespoon olive oil in a pan and saute quinoa well
- Add 1 cup water and salt to the sauteed quinoa and bring to boil
- Cover and cook on slow fire till quinoa is soft. Keep it aside to cool.
- Once quinoa is cool, fluff it up with a fork. Add parsley, cucumber, tomatoes, mint, onions, garlic, lemon juice, and remaining olive oil.
- Toss well and serve.
