Caramelised Coconut Stuffed Idli With Sambar N Chutney

We all have heard about normal idli...they r soft,spongy and very healthy as they r steamed..today I have made a twist in the normal idli and stuffed it with caramelised coconut which enhance its taste to perhaps 10 times the normal idlis

Ingredients
  

  • Urad dal 2 cups
  • Rice 3 cups
  • Salt
  • Grated coconut 1 cup
  • Sugar 3/4 cup
  • Cardamom powder 1/4 tsp

Instructions
 

  • Soak urad dal and rice for at least 5-6 hrs
  • Wash them properly and grind them into a not so fine paste rather it should be coarsely grinded...add salt to it and check consistency....it shouldn't be very flowy but shouldn't be very hard either...let it ferment for 8-10 hrs
  • Take a non stick pan..add grated coconut and sugar and cook them till the sugar gets caramelised and changes colour...
  • Add cardamom powder and mix well..switch off the gas
  • Heat water in idli cooker...now grease the idli moulds with oil..
  • Place 1 tsp of batter in each idli mould....now place 1 tsp of caramelised coconut over it
  • Again place 1 tbsp batter over it and cover it..make all the idlis like this...
  • Steam for about 15 mins in high flame...
  • Serve hot with sambar n chutney
