For the Hummus

  • 1 cup Chickpeas dried chickpeas, rinsed and drained., soaked overnight and boiled until tender. alternatively, use 1 (15-ounce) can of chickpeas
  • 1/4 cup Tahini adds creaminess and traditional hummus flavor.
  • 3 clove Garlic
  • 2 tbsp Olive Oil extra virgin olive oil is recommended for best flavor.
  • 1/2 cup Coriander also known as cilantro; packed with flavor.
  • 2 tbsp Lemon Juice freshly squeezed is best.
  • 1 tsp Salt adjust to taste.
  • 1/2 tsp Cumin optional, adds warmth and depth of flavor., ground

Prepare the Chickpeas

  • Combine the soaked and boiled chickpeas (or drained canned chickpeas) with the garlic, coriander, lemon juice, and salt in a food processor.
