- 1/2 tsp Pepper black, freshly crushed
- 1/2 cup Orange Juice freshly squeezed from approximately 1 large orange
- 1 tsp Garlic Paste
- 2 tbsp Olive Oil
- 1.5 tsp Salt or to taste
For the Coriander Sauce
- 1 Chili finely chopped (adjust to taste), green
- 1/2 cup Coriander fresh, roughly chopped
- 1 tbsp Lemon Juice freshly squeezed
- 1/2 tsp Cumin Powder roasted
- 1 tbsp Olive Oil
For Garnishing
- 1 tbsp Orange Zest fresh
- 2 tbsp Coriander for garnish
Instructions
Prepare the Potatoes
- Cut the par-boiled potatoes into thick slices.
Roast the Potatoes
- Heat olive oil in a large skillet or frying pan over medium heat. Add garlic paste and sauté until lightly browned.
