Ingredients
 

For the Potatoes

  • 2 large Potatoes yukon gold or russet potatoes, par-boiled and cut into thick slices
  • 1/2 tsp Pepper black, freshly crushed
  • 1/2 cup Orange Juice freshly squeezed from approximately 1 large orange
  • 1 tsp Garlic Paste
  • 2 tbsp Olive Oil
  • 1.5 tsp Salt or to taste

Instructions
 

Prepare the Potatoes

  • Cut the par-boiled potatoes into thick slices.

Roast the Potatoes

  • Heat olive oil in a large skillet or frying pan over medium heat. Add garlic paste and sauté until lightly browned.
  • Add the potato slices, black pepper, and salt. Stir-fry until the potatoes are lightly browned and slightly softened.
  • Pour in the orange juice and cook for a few more minutes, allowing the liquid to reduce slightly.

Make the Coriander Sauce
