  • 1/4 cup Yogurt to bind the dough if needed, optional

Prepare the Tomato Mixture

  • Puree the tomatoes, ginger, garlic, and green chilies in a blender until smooth.

Sauté Spices

  • Heat the vegetable oil in a pan. Add mustard seeds and cumin seeds; cook until they splutter.

Cook Tomato Puree

  • Add the tomato puree and curry leaves to the pan. Cook over medium heat, stirring occasionally, until the raw smell disappears and the mixture thickens slightly. This should take about 8-10 minutes.

Dry Roast Flours

  • In a separate pan, dry roast the whole wheat flour, rice flour, and jowar flour separately until lightly fragrant. Let them cool completely.

Combine Dry Ingredients

  • In a large bowl, combine the cooled flours, salt, and sugar.

Crumble in Butter

  • Add the cold butter to the flour mixture and rub it in with your fingertips until the mixture resembles breadcrumbs.

Incorporate Tomato Mixture

  • Gradually add the cooked tomato mixture to the flour mixture, adding about 1/4 to 1/3 of the mixture initially. Mix until combined.

Form the Dough

  • If the dough is too dry, add plain yogurt or a little water at a time until it forms a soft, pliable dough.

Chill the Dough

  • Cover the dough and refrigerate for at least 15-30 minutes to allow the flavors to meld.

Roll and Shape

  • On a lightly floured surface, roll out the dough thinly (about 1/8 inch thick). Use a cookie cutter or knife to cut into desired shapes.

Prick and Bake

  • Prick the crackers with a fork to prevent them from puffing up during baking. Arrange them on a baking sheet lined with parchment paper.

Bake

  • Bake in a preheated oven at 180°C (350°F) for 10-15 minutes, or until the crackers are golden brown and crisp.
