Ingredients

- 1/4 cup Whole Wheat Flour whole
- 1/4 cup Rice Flour
- 1/4 cup Jowar Flour sorghum flour
- 1 tsp Salt or to taste
- 1 tbsp Sugar
Tomato Mixture
- 2 Tomatoes diced, medium
- 3 clove Garlic
- 1 inch Ginger
- 4 Chilies green
- 10 leaves Curry Leaves
Spices & Oil
- 1 tbsp Vegetable Oil
- 1/2 tsp Mustard Seeds rai
- 1/4 tsp Cumin Seeds
- 1/2 tsp Cumin Powder jeera powder
Instructions
Prepare the Tomato Mixture
- Puree the tomatoes, ginger, garlic, and green chilies in a blender until smooth.
Sauté Spices
- Heat the vegetable oil in a pan. Add mustard seeds and cumin seeds; cook until they splutter.
Cook Tomato Puree
- Add the tomato puree and curry leaves to the pan. Cook over medium heat, stirring occasionally, until the raw smell disappears and the mixture thickens slightly. This should take about 8-10 minutes.
Dry Roast Flours
- In a separate pan, dry roast the whole wheat flour, rice flour, and jowar flour separately until lightly fragrant. Let them cool completely.
Combine Dry Ingredients
- In a large bowl, combine the cooled flours, salt, and sugar.
Crumble in Butter
- Add the cold butter to the flour mixture and rub it in with your fingertips until the mixture resembles breadcrumbs.
Incorporate Tomato Mixture
- Gradually add the cooked tomato mixture to the flour mixture, adding about 1/4 to 1/3 of the mixture initially. Mix until combined.
Form the Dough
