Recipe Notes
Additional Tips
- For an extra layer of flavor, add a pinch of ground cardamom or cinnamon to the dough; these spices complement the caramel notes of jaggery beautifully.
- If your jaggery is hard or lumpy, grate it finely or melt it with a splash of milk before adding to the dough to ensure smooth mixing and even sweetness in every cookie.
- For a vegan version, substitute unsalted butter with coconut oil or a plant-based butter; coconut oil adds a subtle aroma that pairs well with jaggery and whole wheat.
- Store cooled cookies in an airtight container with a small piece of bread to help maintain softness, as jaggery-based cookies can firm up over time.
