  • 1 Onion chopped, medium-sized
  • 500 gm Radishes cubed, red
  • 2 cup Cabbage finely chopped
  • 1 Chili green, sliced (adjust to your spice preference)
  • 1 clove Garlic peeled and minced

  • Pepper black, to taste
  • 1/4 cup Onions finely chopped, for garnish, green
  • 1/4 cup Radishes for garnish, thinly sliced

Instructions
 

Sauté Aromatics and Vegetables

  • Heat butter in a large pot or Dutch oven over medium heat. Add cloves and sauté for 30 seconds. Add onion, and cook until softened, about 5 minutes. Stir in red radishes, cabbage, and green chili; cook for another 5 minutes.

Simmer and Blend

  • Add vegetable broth (or water), bring to a boil, then reduce heat and simmer for 15 minutes, or until cabbage is tender. Remove cloves and green chilies. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.

Season and Serve

  • Return the soup to the pot. Season with salt and pepper to taste. Heat through gently. Garnish with chopped green onions and radish slices. Serve hot with crusty bread or croutons.
