Ingredients
 

Sweet Corn & Vegetables

  • 2 cup Corn Kernels fresh or frozen; if using frozen, sweet, thaw completely before using.
  • 1 cup Cucumber finely chopped
  • 1/2 cup Onion finely chopped, red

Spices & Seasoning

  • 1/2 tsp Chili Powder adjust to your spice preference, red
  • 1 tsp Cumin Powder ground cumin; use whole cumin seeds and grind them for a fresher taste.
  • 1/4 tsp Chaat Masala
  • 1.5 tsp Salt or to taste

Prepare the Corn

  • Boil 2 cups of sweet corn kernels in a pan with enough water until tender. Alternatively, pressure cook for 4-5 whistles. Once cooled, drain the water.

Combine Ingredients

  • In a large bowl, combine the cooked corn, chopped cucumber, red onion, red chili powder, cumin powder, chaat masala, shredded coconut, chopped coriander, and salt.

Finish and Serve

  • Mix all ingredients thoroughly. Stir in the lemon juice and mix again. Serve immediately or chill for later. Enjoy!
