Ingredients

- 2 tbsp Oil
- 1/2 tsp Mustard Seed
- 1/4 tsp Cumin Seed
- 1/4 tsp Asafoetida hing
- 1/2 tsp Chili Powder red
- 1/2 tsp Garam Masala
- 1/4 tsp Turmeric Powder haldi
- 1 1/2 tsp Salt or to taste
- 2 tbsp Gram Flour besan
- 2 tsp Peanut Powder
- 2 cup Water
- 1 tbsp Desiccated Coconut
- 3 tbsp Coriander chopped, cilantro
Instructions
- In a mixer grinder, combine the green peas, green chilies, and garlic. Pulse until a coarse paste forms. Avoid over-processing.
- Heat the oil in a pan over medium heat. Add the mustard seeds and allow them to splutter. This releases their nutty aroma.
- Add the cumin seeds and asafoetida. Sauté for a few seconds until fragrant.
- Add the green pea paste to the pan and sauté for 2-3 minutes until it slightly changes color.
- Stir in the red chili powder, garam masala, turmeric powder, salt, gram flour, and peanut powder. Roast for 5-6 minutes, stirring constantly, until the spices are fragrant and the mixture is well combined. This step enhances the flavors and creates a rich base for the amti.
- Pour in the water and mix well. Bring the mixture to a simmer.
- Add the desiccated coconut and stir. This adds a subtle sweetness and creaminess to the amti.
- Cover the pan and simmer on low heat for 8-10 minutes, or until the amti thickens to your desired consistency.
- Stir in the chopped coriander leaves. Serve hot with rice or chapati.
