  • In a preheated pan, heat 2 tablespoons of oil. Add the cumin seeds and whole green toor dal. Roast for about 2-3 minutes until fragrant.
  • Add the garlic cloves and continue to roast for another 2-3 minutes, stirring occasionally, until the dal is lightly browned.
  • Transfer the roasted dal and garlic mixture to a grinder. Grind to a coarse powder and set aside.
  • In the same pan, heat the remaining 2 tablespoons of oil. Add mustard seeds and asafoetida. Once the mustard seeds splutter, add the dried red chilies, 1/3 teaspoon of red chili powder, and turmeric powder. Sauté for a few seconds until fragrant.
  • Add the chopped onions and sauté for about 1 minute until softened. Then, add the chopped tomatoes and cook until they break down and become pulpy.
  • Add the ground dal mixture to the pan and mix well to combine with the spices and aromatics.
  • Stir in the remaining 1/2 teaspoon of red chili powder, garam masala, coriander powder, and salt. Mix thoroughly to ensure the dal is evenly seasoned.
  • Pour in the water, bring the mixture to a simmer, and then reduce the heat to medium-low. Cover the pan and cook for 5-8 minutes, or until the dal is tender and cooked through. Adding water after the spices ensures they bloom properly and infuse the dal with flavor.
  • Finally, stir in the freshly chopped coriander leaves. Serve hot with roti, chapati, or rice.
