Ingredients
Chickpeas & Preparation
- 1 cup Chickpeas kabuli chana, soak overnight for 8-9 hours. alternatively, dried, rinsed and drained., use 1 (15-ounce) can of chickpeas
Vegetables
- 1 Tomato medium, diced
- 1/2 Onion small, finely chopped
- 1/4 cup Parsley fresh, finely chopped
- 1/4 cup Mint Leaves fresh, chopped
Dressing
- 2 tbsp Olive Oil
- 1 tbsp Lemon Juice freshly squeezed
- 3/4 tsp Chaat Masala
- 1/4 tsp Chili Powder adjust to your spice preference, red
- 1/4 tsp Pepper freshly ground, black
- 1/2 tsp Cumin ground, ground, or 1/2 tsp roasted cumin seeds
- 1 tsp Salt or to taste
Instructions
Prepare the Chickpeas
- Soak 1 cup of dried chickpeas overnight (8-9 hours). Rinse well. Pressure cook with enough water for 3 whistles, then reduce heat and cook for another 5-8 minutes until tender but not mushy. Drain and let cool. (If using canned chickpeas, simply rinse and drain one 15-ounce can.)
Make the Dressing
- In a small bowl, whisk together olive oil, lemon juice, chaat masala, red chili powder, black pepper, cumin, and salt until well combined.
Assemble the Salad
- In a large bowl, combine the cooked chickpeas, diced tomato, chopped onion, parsley, and mint.
Dress and Serve
- Pour the dressing over the chickpea mixture and toss gently to coat. Taste and adjust seasoning as needed. Serve immediately or chill for later. Garnish with extra mint leaves before serving.
