Ingredients
For the Kebabs
- 100 gm Mushroom finely chopped; cremini or button mushrooms recommended
- 1 cup Chickpea Flour also known as chickpea flour; ensure it's roasted for a richer flavor, besan, roasted
- 1/2 cup Soy Granules soaked in warm water for at least 15 minutes, then squeezed dry
- 1/2 cup Onion paste
- 1 tbsp Garlic paste
- 1 tbsp Ginger paste
- 1 tsp Pepper black, ground
- 1 tbsp Garam Masala a blend of ground spices; can be store-bought or homemade
- 1/2 tsp Mango Powder adds a tangy flavor, dried mango powder
- 1.5 tsp Salt or to taste
- 2 tbsp Oil for frying; vegetable or canola oil recommended
Optional Garnish
- Coriander finely chopped, for garnish
Equipment
- Skewers soaked in water for at least 30 minutes to prevent burning
Instructions
Sauté Onion Paste
- Heat oil in a frying pan. Add onion paste and sauté until golden brown.
Add Aromatics and Mushrooms
- Add ginger-garlic paste, finely chopped mushrooms, and squeezed soya granules to the pan. Stir well.
Season and Combine
- Season with salt, black pepper, garam masala, and amchur powder. Sauté for 2-3 minutes until the mushrooms soften slightly. Stir in the roasted Bengal gram flour.
Shape and Skewer
- Mix well until everything is combined. Form the mixture into small, oblong kebabs. Carefully insert the kebabs onto soaked skewers.
Shallow Fry and Serve
- Shallow fry the kebabs in oil until golden brown and cooked through. Garnish with fresh coriander leaves (optional). Serve hot with your favorite dipping sauce and enjoy!
