- 1 tbsp Besan Chickpea flour
- 1/2 cup Bottle Gourd Peeled and diced
- 1/4 cup Carrot Chopped
- 1 teaspoon Oil
- 1/2 teaspoon Mustard Seeds
- 1/4 teaspoon Cumin Seeds
- 1/4 teaspoon Turmeric Powder
- 3/4 teaspoon Salt Or as required
- 2 cups Water For kadhi consistency
Instructions
Preparing the Kadhi Base
- In a bowl, whisk curd and besan until smooth. Add turmeric powder and water, and mix well to remove any lumps.
Cooking the Vegetables
- Heat oil in a deep pan. Add mustard seeds and cumin seeds, and let them crackle gently.
- Add bottle gourd and carrot. Cook for 3 to 4 minutes until slightly soft.
Cooking the Kadhi
- Pour in the prepared curd mixture and add salt. Stir continuously on low heat to prevent curdling.
- Let the kadhi simmer on low heat for 15 to 20 minutes, stirring occasionally until vegetables are fully cooked.

- Adjust consistency with water if needed and switch off the heat. Serve warm.
