Here I have blended fresh mint leaves with cocoa and trust me the outcome was just one word, DELECTABLE!
Vegan fresh mint leaves hot chocolate drink is made using creamy coconut milk, Kalya unsweetened cocoa Powder, fresh mint extract and is sweetened using raw sugar.
Grab a cup of this healthy and refreshing beverage! It just takes less than 15 minutes to prepare. Enjoy this warm drink on a cold day.

Ingredients
  

  • 1 1/4 cups coconut milk thick
  • 1/2 cup water
  • 1 1/2 tbsp cocoa powder unsweetened, I used Kalya cocoa powder
  • 1 1/2 tbsp sugar organic raw
  • ¾ teaspoon mint extract fresh, take from 10 to 15 fresh mint leaves

Instructions
 

  • Clean and wash mint leaves, squeeze the leaves well and extract about ¾ teaspoon of mint extract without adding water.
  • Combine water and coconut milk in a pan.

  • Heat it on a lower flame until small bubbles are formed. (Do not boil)
  • Turn off the flame.
  • Add cocoa powder and sugar.

  • Mix well until the ingredients are combined completely.
  • Add the mint extract and mix gently.
  • Pour into the serving mugs and serve immediately.

Notes

  1. Adjust water according to the density of coconut milk. If it is less creamy and thin, you can avoid adding water and use the same amount of coconut milk only.
  2. Adjust the sweetener according to your taste.
  3. Use as much as mint leaves to obtain ¾ teaspoon of fresh mint extract.
  4. When you are heating the coconut milk, stir it often.
  5. 1 cup = 250 ml
