Ingredients

- 1 tsp Olive Oil
- 2 Garlic minced cloves
- 2 tbsp Cocoa Powder premium quality, unsweetened
- 1 tsp Chili Flakes
- 1 Lemon zest and juice
- 2-3 drops Lemon Juice
- 2 tbsp Almond Milk to adjust consistency
- Pinch Salt sea salt, to taste
Instructions
Prepare the Eggplant
- Wash and slice the eggplant into 3-4 mm thick rounds.
- Heat a skillet over medium-low heat and drizzle with 1 teaspoon of olive oil.
- Add the eggplant slices, sprinkle with salt and brown sugar, and cook until lightly browned on both sides, flipping halfway through. Set aside to cool.
Make the Dip
- Heat the remaining 1 teaspoon of olive oil in a small saucepan over medium heat. Add the minced garlic and cook until fragrant (about 30 seconds). Remove from heat.
- Combine the cooled eggplant, cooked garlic, cocoa powder, chili flakes, lemon zest, and lemon juice in a blender. Blend until smooth.
- Add 2 tablespoons of water or almond milk to reach desired consistency. Blend again until smooth.
- Season with salt to taste.
- Chill for at least 10-15 minutes before serving.
