Prepare the Eggplant

  • Wash and slice the eggplant into 3-4 mm thick rounds.
  • Heat a skillet over medium-low heat and drizzle with 1 teaspoon of olive oil.
  • Add the eggplant slices, sprinkle with salt and brown sugar, and cook until lightly browned on both sides, flipping halfway through. Set aside to cool.

Make the Dip

  • Heat the remaining 1 teaspoon of olive oil in a small saucepan over medium heat. Add the minced garlic and cook until fragrant (about 30 seconds). Remove from heat.
  • Combine the cooled eggplant, cooked garlic, cocoa powder, chili flakes, lemon zest, and lemon juice in a blender. Blend until smooth.
  • Add 2 tablespoons of water or almond milk to reach desired consistency. Blend again until smooth.
  • Season with salt to taste.
  • Chill for at least 10-15 minutes before serving.
  • Serve with pita chips, vegetables, or crackers.
